Amazing Keto Meatloaf

Cooking spray

1 tbsp. extra-virgin olive oil
medium onion, chopped
stalk celery, chopped
cloves garlic, minced
1 tsp. dried oregano
1 tsp. chili powder
2 lb. ground beef
1 c. shredded cheddar
1/2 c. almond flour
1/4 c. grated Parmesan
1 tbsp. Coconut Amino Acids (Replacement for Soy Sauce) Soy is a no-no...

1. Preheat oven to 400°. Grease a medium baking dish with cooking spray. In a medium skillet over medium heat, heat oil.

2. Add onion and celery and cook until soft for at least 5 minutes.

3. Stir in garlic, oregano, and chili powder and cook until fragrant, 1 minute. Let the mixture cool slightly. In a large bowl, combine ground beef, vegetable mixture, cheese, almond flour, Parmesan, eggs, soy sauce, and season with salt and pepper.

4. Shape into a large loaf in a baking dish. Then lay bacon slices on top. 

5. Cook until bacon is crispy and beef is cooked thoroughly for about 1 hour.

If bacon is cooking too quickly, cover dish with foil.

Make it even better with a fried egg over each slice!
